Understanding the rheological behavior of these natural macromolecules is essential for optimizing their processing, designing novel biomaterials, and developing sustainable technologies. This abstract presents a comprehensive review of the rheological properties of biopolymers. Rheology is the study of how materials deform and flow under the influence of external forces, and in the context of biopolymers, it is particularly relevant due to their viscoelastic nature.
